Chocolate-Chip Buttermilk Scones

I had some buttermilk in the fridge recently which I didn’t really know what to do with so I went hunting online and found this recipe.  I adapted it a bit and this is what I came up with.  Very yum!  We topped ours with nutella  🙂  I was hesitant to add the cranberries, but they were actually good.

Here’s what I did:

4 cups SR flour

½ cup sugar

225g butter

250g choc chips

75g dried sweetened cranberries

Vanilla extract

1½ cups buttermilk

1 egg, lightly beaten

Process flour, sugar and butter.

Transfer to mixing bowl and add remaining ingredients.

Pour onto floured surface and knead ever so briefly til it holds together and shape. This size batch is a double so I made 2 rounds.   (I obviously cut mine into wedges but when I make them again I’ll use my regular scone cutter–it’ll be easier to halve and top them).

Cut, place on a tray lined with baking paper and bake in a 200ᵒC oven for 15-20 mins.
